grenache blanc that was ripe but full of nice acid, given the POOL treatment with a long, slow, gentle basket press. After 3 days, the juice dripping from the press was syrupy and golden, and looked like Cola. It was amazing. The slow press softens the phenolics while adding texture and incorporating a generous amount of oxygen. That's a lot of jargon. Maybe we should just say it is a great white for winter.
